Lentils and rice pudding
- 200 g lentiles (uncooked)
- 100 g wholegrain rice (uncooked)
- 50 g almond meal
- 1 / 2 tbsp unrefined cane sugar
- 1 orange, juice and zest
- 2 tsp ground cinnamon
- 2 star anises
- 1 pinch sea salt
- 50 g raisins
- 500 + 150 ml almond milk
One day ahead, soak the lentils in a big bowl of water.
On the d-day, place all ingredients in a pot, except the last 150 ml milk.
Bring to a boil and whisk for 10 minutes. Lower the heat.
Let simmer for 30 minutes on low heat. Add the remaining 150 ml almond milk gradually, untill all liquids are absorbed.
Serve warm with ground nuts or grated coconut, fresh fruit…
